Step-by-Step Instructions
  1. In a large mixing bowl, gently combine ground chicken, breadcrumbs, grated Parmesan, beaten egg, garlic powder, onion powder, chopped parsley, and salt and pepper to taste. Mix until just combined; be careful not to overmix.
  2. While the mixture is resting, preheat your oven to 400°F (200°C). Prepare a baking sheet by lightly greasing it with cooking spray or lining it with parchment paper.
  3. Using your hands, portion the meat mixture into small balls, roughly 1 to 1.5 inches in diameter.
  4. Carefully arrange the shaped meatballs on the prepared baking sheet, leaving enough space between each for hot air to circulate.
  5. Place the baking sheet in the preheated oven and bake the chicken meatballs for 15 to 20 minutes, until golden-brown and reach an internal temperature of 165°F (74°C).
