Method

Step-by-Step Instructions for Baked Sweet Chili Chicken
  1. In a medium bowl, combine 1/2 cup of sweet chili sauce, 2 tablespoons of soy sauce, 2 minced garlic cloves, the juice of one lime, and 1 tablespoon of honey or brown sugar. Whisk these ingredients together until well blended.
  2. Place your choice of chicken thighs or breasts into a shallow dish or a resealable ziplock bag. Pour the prepared marinade over the chicken, ensuring it's evenly coated. Seal the dish or bag and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C). This temperature ensures the chicken bakes evenly and creates that desirable caramelized glaze.
  4. Line a baking sheet with parchment paper or lightly grease it with cooking spray. Remove the marinated chicken from the fridge and place it on the prepared baking sheet.
  5. Bake the chicken uncovered in the preheated oven for 20-25 minutes. Halfway through the cooking time, baste the chicken with the leftover marinade.
  6. Once baked, remove the Baked Sweet Chili Chicken from the oven, and let it rest for a few minutes. Before serving, sprinkle with freshly chopped cilantro or parsley.
