- Pour ½ cup of chunky salsa into the bottom of the slow cooker and spread evenly.
- Season chicken generously with kosher salt and place on top of the salsa.
- Wash and prick potatoes, then layer them over the seasoned chicken.
- Cover slow cooker and cook on low for 6 hours or high for 4 hours.
- After cooking, remove potatoes and shred the chicken with two forks in the crockpot.
- Assemble by slicing potatoes in half and topping with shredded chicken and additional salsa.
