Method
 

Step-by-Step Instructions
  1. Pour ½ cup of chunky salsa into the bottom of the slow cooker and spread evenly.
  2. Season chicken generously with kosher salt and place on top of the salsa.
  3. Wash and prick potatoes, then layer them over the seasoned chicken.
  4. Cover slow cooker and cook on low for 6 hours or high for 4 hours.
  5. After cooking, remove potatoes and shred the chicken with two forks in the crockpot.
  6. Assemble by slicing potatoes in half and topping with shredded chicken and additional salsa.
