  • 1/4 cup Olive Oil
  • 2 tbsp Lemon Juice
  • 3 cloves Minced Garlic
  • 2 tbsp Fresh Dill Dried herbs also work.
  • 2 tbsp Fresh Mint Dried herbs also work.
For the Tzatziki
  • 1 medium Cucumber Opt for English cucumbers.
  • 2 cups Greek Yogurt Coconut yogurt as a substitute.
For the Bowl Assembly
  • 1 cup Cherry Tomatoes Diced bell peppers can be used.
  • 1 medium Red Onion Green onions can be used.
  • 1 tsp Smoked Paprika Optional.

Step-by-Step Instructions
  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, dill, and mint. Add the chicken and marinate for at least 15 minutes.
  2. Prepare Tzatziki: Grate the cucumber and squeeze out moisture. Combine with yogurt, garlic, lemon juice, dill, mint, salt, and pepper. Refrigerate.
  3. Cook Chicken: Heat a grill pan over medium-high heat. Cook the chicken for 5-7 minutes on each side until golden brown. Let it rest for 5 minutes before slicing.
  4. Assemble Bowls: Start with your choice of base, layer sliced chicken and fresh vegetables.
  5. Garnish and Serve: Drizzle each bowl with tzatziki and sprinkle with herbs or smoked paprika.
