Marinade and Grill
- In a medium bowl, whisk together olive oil, minced garlic, lemon juice, smoked paprika, salt, and pepper. Set aside.
- Add shrimp to the marinade and toss gently to coat. Cover and refrigerate for 15 to 30 minutes.
- Soak wooden skewers in water for 30 minutes. Preheat grill to medium-high heat. Thread 4-5 shrimp onto each skewer.
- Grill the skewers for 2-3 minutes on each side until shrimp are pink and opaque.
- Remove skewers from grill and serve, garnished with fresh herbs and lemon juice.
