Marinating and Grilling
- Prepare the lemongrass by peeling off the tough outer layers, finely chopping the inner part, and smashing it to release the oils.
- In a mixing bowl, combine minced lemongrass, garlic, fish sauce, honey, lime juice, vegetable oil, black pepper, and salt. Whisk to create the marinade.
- Marinate the boneless chicken thighs in the marinade for at least 1 hour, ideally overnight.
- Preheat your grill to medium-high heat (around 400°F or 200°C) for about 15-20 minutes.
- Grill the marinated chicken thighs for approximately 5-7 minutes on each side, until golden brown and cooked to an internal temperature of 165°F (74°C).
- Let the chicken rest for at least 5 minutes before slicing and serving.
