Method
 

Marinating and Grilling
  1. Prepare the lemongrass by peeling off the tough outer layers, finely chopping the inner part, and smashing it to release the oils.
  2. In a mixing bowl, combine minced lemongrass, garlic, fish sauce, honey, lime juice, vegetable oil, black pepper, and salt. Whisk to create the marinade.
  3. Marinate the boneless chicken thighs in the marinade for at least 1 hour, ideally overnight.
  4. Preheat your grill to medium-high heat (around 400°F or 200°C) for about 15-20 minutes.
  5. Grill the marinated chicken thighs for approximately 5-7 minutes on each side, until golden brown and cooked to an internal temperature of 165°F (74°C).
  6. Let the chicken rest for at least 5 minutes before slicing and serving.
