  • 1 whole Whole Chicken 3-4 lbs, preferably organic
  • ½ cup Plain Yogurt or Greek yogurt for thicker consistency
  • 2 tbsp Lemon Juice fresh lemon is preferred
  • tsp Salt
For the Spice Mix
  • 1 tbsp Ground Cumin
  • 1 tbsp Ground Coriander
  • 1 tsp Turmeric Powder
  • tsp Garam Masala
  • ½ tsp Red Chili Powder adjust to taste
For the Aromatics
  • 1 large Onion thinly sliced
  • 4 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
  • 2 medium Tomatoes chopped
For Cooking
  • 3 tbsp Vegetable Oil or Ghee
  • 1 handful Fresh Cilantro chopped

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the yogurt, lemon juice, salt, and spices. Rub the mixture generously over the chicken and marinate for at least 30 minutes or overnight.
  2. Heat the oil or ghee in a Dutch oven over medium-high heat. Sear the marinated chicken skin-side down for about 4 minutes, then flip and sear the other side for an additional 3 minutes.
  3. Remove the chicken and sauté onion, garlic, and ginger in the same pot for about 3 minutes. Add chopped tomatoes and any remaining marinade, stirring to combine.
  4. Return the chicken to the pot, pour in water, cover, and simmer on low for 1 hour until tender.
  5. Transfer the chicken to a platter and let it rest for 10 minutes before garnishing with cilantro.
