Salsa Verde Sauce
  • 6 pieces Tomatillos use green tomatoes if unavailable
  • 1 medium Jalapeños adjust quantity for desired spice level
  • 1 medium Onion yellow onions preferred
  • 4 cloves Garlic cloves fresh garlic is best
  • 1 bunch Fresh cilantro omit if disliked
  • 2 tablespoons Lime juice fresh juice recommended
  • to taste Salt sea salt recommended
  • to taste Pepper freshly cracked pepper recommended
Chicken
  • 1 pound Chicken (boneless) chicken thighs are juicier
  • 2 tablespoons Olive oil can substitute with avocado oil

Method
 

Preparation
  1. Bring a medium saucepan of water to a boil. Add tomatillos, jalapeños, onion, and garlic, boiling for about 10 minutes until soft. Drain and transfer to blender with cilantro, lime juice, salt, and chicken broth. Blend until smooth.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear undisturbed for 3-4 minutes on each side until golden crust forms.
  3. Pour blended salsa verde over chicken in skillet. Reduce heat to low, cover, and simmer for 10-12 minutes until chicken reaches 165°F.
  4. Taste and adjust seasoning of sauce. Allow to rest before serving. Garnish with chopped cilantro.
