Instructions for Slow Cooker Fajita Salsa Chicken
- Slice chicken thighs into thin strips, chop onions and bell peppers into bite-sized pieces, and place them in the slow cooker.
- Pour about two-thirds of salsa over the chicken and vegetables, sprinkle salt, and gently stir until combined.
- Cover the slow cooker and cook on low for 6 hours or high for 4 hours.
- Check if chicken is tender, remove and shred with forks, then return to pot and mix with remaining juices.
- Add remaining salsa and lime juice, stir well, and adjust seasoning to taste.
- Serve in tortillas, taco bowls, or over rice, garnished with fresh toppings if desired.
