Instructions for Slow Cooker Fajita Salsa Chicken
  1. Slice chicken thighs into thin strips, chop onions and bell peppers into bite-sized pieces, and place them in the slow cooker.
  2. Pour about two-thirds of salsa over the chicken and vegetables, sprinkle salt, and gently stir until combined.
  3. Cover the slow cooker and cook on low for 6 hours or high for 4 hours.
  4. Check if chicken is tender, remove and shred with forks, then return to pot and mix with remaining juices.
  5. Add remaining salsa and lime juice, stir well, and adjust seasoning to taste.
  6. Serve in tortillas, taco bowls, or over rice, garnished with fresh toppings if desired.
