Ingredients
  

For the Chicken
  • 2 pounds Chicken Breasts or Thighs Thighs add juiciness.
For the Vegetables
  • 4 cups Potatoes Fresh varieties preferred.
  • 3 cups Carrots Use fresh for better flavor.
For the Seasoning
  • 1 tablespoon Onion Powder
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Dried Dill
  • 1 teaspoon Kosher Salt
For the Cooking Liquid
  • 1 cup Chicken Stock Add moisture to veggies.
For the Creamy Ranch Dressing
  • 1 cup Whole Greek Yogurt
  • 1/2 cup Avocado Mayo
  • 2 tablespoons Apple Cider Vinegar

Method
 

Step-by-Step Instructions
  1. Mix together onion powder, garlic powder, dried dill, and kosher salt in a small bowl.
  2. Wash and dice the potatoes and carrots, and place them in the bottom of the slow cooker. Pour a splash of chicken stock over them and sprinkle half of the ranch seasoning on top.
  3. Place the chicken on top of the veggies and season with the remaining ranch seasoning and a pinch of salt.
  4. Cover and cook on high for 3 hours or low for 6 hours until chicken is cooked through.
  5. Whisk together Greek yogurt, avocado mayo, vinegar, and remaining seasoning in a bowl for the dressing.
  6. Remove chicken and slice it. Serve with veggies and drizzle creamy ranch dressing over top.
  7. Garnish with chopped parsley or chives before serving.
