  • 3 cloves Minced Garlic or garlic powder
  • 2 tablespoons Lemon Juice or vinegar
  • 2 tablespoons Olive Oil or canola oil
  • 1 teaspoon Cumin or ground coriander
  • 1 teaspoon Paprika or smoked paprika
  • 1 teaspoon Oregano or dried thyme
  • to taste Salt
  • to taste Pepper

  • 2 pounds Boneless Chicken Breasts or thighs
Optional Add-Ins
  • 1 cup Bell Peppers mixed veggies are great
  • 1 medium Red Onion

Method
 

Preparation
  1. In a large bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, cumin, paprika, oregano, salt, and pepper. Whisk until smooth.
  2. Cut chicken into bite-sized cubes and add to marinade. Coat well, cover, and refrigerate for at least 2 hours.
  3. Soak skewers in water for 30 minutes.
  4. Preheat the grill to medium-high heat (375°F or 190°C), ensuring grates are clean and oiled.
  5. Thread marinated chicken onto skewers and grill for 4-5 minutes per side until the internal temperature reaches 165°F.
  6. Remove from the grill, let rest for 5 minutes, and garnish with fresh parsley or lemon.
