Ingredients
  

For the Steak and Marinade
  • 1 pound Sirloin Steak Aim for 1-inch thickness for even cooking.
  • ¼ cup Olive Oil Avocado oil is a great substitute.
  • 4 cloves Garlic Minced; feel free to use garlic powder.
  • 1 tablespoon Lemon Juice Always opt for fresh juice.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • to taste Salt
  • to taste Black Pepper
For the Bowl Assembly
  • 2 cups Cooked Grains Choose brown rice, quinoa, or cauliflower rice.
  • 1 can Roasted Chickpeas Canned for quick prep.
  • 1 cup Cherry Tomatoes Halved; swap for seasonal veggies.
  • 1 cup Cucumber Diced.
  • ½ cup Red Onion Thinly sliced.
  • ½ cup Kalamata Olives A mix enhances flavor.
  • ½ cup Feta Cheese Omit for dairy-free.
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Coconut yogurt is a great alternative.
  • 2 tablespoons Fresh Dill Chopped.
  • 1 clove Garlic Minced.
  • ½ tablespoon Lemon Juice
  • a pinch Salt

Method
 

Marinate the Steak
  1. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, thyme, and salt and black pepper to taste. Coat the sirloin steak in the marinade and refrigerate for at least 30 minutes, up to 4 hours.
Prepare Tzatziki Sauce
  1. Combine Greek yogurt, dill, minced garlic, lemon juice, and a pinch of salt in a bowl. Mix well and refrigerate for at least 15 minutes.
Make Vinaigrette
  1. Whisk together olive oil, honey (if using), lemon juice, and a sprinkle of salt and pepper in a small bowl. Set aside.
Cook the Steak
  1. Preheat a skillet or grill pan over medium-high heat for about 5 minutes. Sear the marinated sirloin steak for 4-5 minutes on each side, or until it reaches medium-rare.
  2. Remove the steak from the heat, let it rest for 5 minutes, and slice against the grain.
Assemble the Bowl
  1. Start with a base of cooked grains in a large bowl. Layer with sliced steak, roasted chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta if desired. Drizzle with tzatziki sauce and vinaigrette.
