  • 1 head romaine lettuce
  • 1 cup kale roughly torn
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1/4 medium red onion thinly sliced
  • 1/2 cup parmesan cheese shredded
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar

Preparation Steps
  1. Wash the romaine lettuce and kale under cold running water. Pat them dry and chop the romaine into bite-sized pieces, tearing the kale into smaller pieces.
  2. Combine the chopped romaine and kale in a large salad bowl.
  3. Fold in the diced cucumber, halved cherry tomatoes, and sliced red onion.
  4. Sprinkle the shredded Parmesan over the top of the salad.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  6. Drizzle the dressing over the salad and toss gently to coat.
