- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Rinse the cauliflower under cold water and pat it dry. Cut into evenly sized florets (1-2 inches).
- In a mixing bowl, combine olive oil with smoked paprika, chili powder, cumin, garlic powder, salt, and black pepper. Whisk until well-blended.
- Add the cauliflower florets to the spice mixture and toss until coated evenly.
- Spread cauliflower in a single layer on the baking sheet and roast for 25-30 minutes, turning halfway, until golden brown and crispy.
- Remove from oven, squeeze fresh lemon juice, and sprinkle with herbs and sesame seeds. Serve warm.
