  • 1 tablespoon Italian Seasoning Fresh herbs like basil or oregano can be used
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Freshly Ground Black Pepper Substitute with white pepper for a milder option
Topping
  • 1 cup Finely Shredded Parmesan Cheese Pecorino Romano or dairy-free nutritional yeast can be used
  • 2 tablespoons Fresh or Dried Parsley Used for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly with olive oil.
  2. Slice the zucchini and yellow squash into half-moons, and halve the small tomatoes. Combine all vegetables in a large mixing bowl.
  3. Drizzle olive oil over the vegetables. Add minced garlic, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Spread the vegetable mix onto the prepared baking sheet in a single layer.
  5. Sprinkle shredded Parmesan cheese over the top of the vegetables, then roast in the oven for 20-25 minutes.
  6. If desired, broil for an additional 1-2 minutes for extra crispiness.
  7. Garnish with parsley and serve warm.
