  • 2 medium Russet Potatoes Diced; red or yellow potatoes work well.
  • 1 cup Beef Broth Chicken or vegetable broth can be used.
For Garnish
  • 1/4 cup Chopped Parsley Green onions, chives, or cilantro can be used as substitutes.

Directions
  1. Heat the oil in a large skillet over medium-high heat for about 1-2 minutes until shimmering.
  2. Add the ground beef, seasoning with salt and black pepper. Cook undisturbed for 3 minutes, then break apart and cook for an additional 2 minutes.
  3. Add the finely chopped onion and sauté for about 3 minutes until translucent.
  4. Stir in the minced garlic and tomato paste, cooking for about 1-2 minutes until fragrant.
  5. Add diced potatoes, beef broth, and Worcestershire sauce. Stir and bring to a gentle sizzle.
  6. Cover with a lid, reduce heat to medium-low, and simmer for 20-25 minutes, stirring occasionally.
  7. Once potatoes are fork-tender, adjust seasoning as necessary, remove from heat, and garnish with chopped parsley.
