Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground chicken and cook for about 8-10 minutes, stirring occasionally, until browned.
  2. In a mixing bowl, combine 2 tablespoons of lime juice, 2 tablespoons of fish sauce, 1 teaspoon of chili flakes, and 1 tablespoon of roasted rice powder. Whisk together.
  3. Once the chicken is cooked, transfer it to the bowl with the sauce. Add 1 sliced shallot, and ¼ cup each of mint and cilantro. Toss gently.
  4. Carefully separate 10-12 butter lettuce leaves. Spoon a portion of the chicken filling into each leaf.
  5. Sprinkle additional roasted rice powder over the filled lettuce leaves and top with fresh chili slices if desired. Serve immediately.
