Ingredients

For the Bites
  • 2 cups Hashbrowns frozen or freshly grated
  • 1 lb Ground Breakfast Sausage fully cooked and drained
  • 2 Eggs beaten
  • 1 cup Shredded Cheese cheddar or pepper jack
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper freshly ground
For Cooking
  • 1 tbsp Olive Oil or cooking spray

Equipment

  • skillet
  • Mixing Bowl
  • Baking sheet
  • parchment paper
  • cookie scoop

Method

Step-by-Step Instructions
  1. In a skillet over medium heat, brown the ground breakfast sausage for 5-7 minutes, crumbling as it cooks. Drain excess grease and cool.
  2. In a large mixing bowl, combine the cooked sausage with hashbrowns, beaten eggs, shredded cheese, onion powder, garlic powder, salt, and pepper. Mix well.
  3. Shape the mixture into bite-sized rounds, roughly the size of a golf ball, and arrange on a parchment-lined baking sheet.
  4. Heat olive oil over medium-high heat. Add the bites to the pan and cook for 4-5 minutes on each side until golden brown and crispy. Alternatively, bake at 400°F (200°C) for 15-20 minutes.
  5. Transfer cooked bites to a plate lined with paper towels. Serve warm, garnished with chopped chives or parsley if desired.

Allow cooked sausage to cool slightly before mixing to maintain texture. Preheat oil for crispy bites and avoid overcrowding the pan during cooking.
