Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the rainbow carrots thoroughly; peel if desired and cut into uniform sizes.
  3. Toss the prepared carrots with oil, salt, and pepper in a mixing bowl.
  4. Spread the carrots in a single layer on the baking sheet, dot with butter, and drizzle with honey.
  5. Roast the carrots in the preheated oven for 30-35 minutes, tossing halfway.
  6. Mix gremolata in a small bowl with carrot greens, almonds, minced garlic, lemon juice, and olive oil.
  7. Remove the bay leaves and garlic cloves from the roasted carrots, drizzle with lemon juice and gremolata before serving.
