  • 1 pound Red Potatoes halved
  • 3 medium Carrots chopped
  • 1 medium Cabbage wedges, added 2 hours before serving

Preparation Steps
  1. Rinse the corned beef brisket under cold water to remove excess brine, then pat it dry with paper towels.
  2. Layer sliced onions and minced garlic in the slow cooker.
  3. Position the seasoned corned beef brisket on top of the onion and garlic base, fat side up.
  4. Surround the beef with halved red potatoes and chopped carrots.
  5. Pour in enough water, low-sodium broth, or beer to cover the meat and vegetables, about 4-6 cups.
  6. Cover and cook on low for 8 to 10 hours.
  7. About 2 hours before serving, add the cabbage wedges on top.
  8. Once cooking time is up, allow the corned beef to rest for 5-10 minutes before slicing against the grain.
