- Preheat your oven to 375°F (190°C). Butterfly the chicken breasts by slicing them horizontally, leaving one edge intact. Season with salt and pepper, then dredge in flour.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds, then add spinach and cook for 2-3 minutes until wilted. Fold in the roasted red peppers.
- Open the butterfly pocket of each chicken breast. Layer mozzarella slices at the base, then add the spinach and pepper mixture. Fold chicken over and secure with toothpicks.
- Heat olive oil and butter in the skillet. Add the stuffed chicken and cook for 5-6 minutes on each side until golden brown and reaches 165°F (74°C).
- Transfer the chicken to a plate and let it rest for 5 minutes. Serve alongside your favorite sides.
